This morning’s cooking experiment. I followed Margaux’s recipe from her wonderful Tumblr http://nowimacook.com/, which I can’t recommend enough - her food looks so beautiful. I altered the recipe slightly, topping the fraisiers with strawberry jelly instead of marzipan.
In the absence of a blowtorch to loosen the moulds, I used a lit candle instead - retro. Next time, some popping candy in the sponge might form a good textural contrast.
